A perfect dish for the colder time of the year.
What you need:
600 - 800 g button mushrooms (or add some king oyster mushrooms)
4 red peppers
2-3 onions
2 carrots
2 table spoons tomato puree
Olive oil
Brown almond butter
Balsamic vinegar (the dark one), paprika, chili, pepper, salt, vegetable stock, agave syrup
- Dice all vegetables to the desired size
- Fry the onions with oil, tomato puree, syrup, spices
- Add the carrots, pepper and mushrooms and cook them until soft
- In the end, add some almond butter and balsamic vinegar
