This week I saw a little stand at the market that sold nothing but mushrooms. All kinds of mushrooms, even truffles. I couldn’t resist the splurge and bought a small black summer truffle, though I didn’t know what to do with it. Looked on the internet, but that didn’t satisfy. Eggs with truffle, and mashed potato with truffle – all the rest was connected to chocolate truffles (which is quite different from the mushroom).
Today I dared to slice it very very thin – use e.g. a japanese mandolin knife and watch your fingers. For those who do not want to buy the truffles: I guess this is also very tasty – maybe even better - with porcini mushrooms.
First I cooked for 15 mins some cream with thyme, pepper, salt, garlic. Seperate I cooked three leeks, cut into 1 cm slices. The leeks were then mixed in an oiled dish with very thin (1/4 cm) sliced potatoes. Added the sliced truffles and poured the cream over it. Covered the dish with foil and placed it in a 200C oven for one hour. Then cooked it uncovered for 15 mins. more, untill nice bubbly and golden. Served it with green salad. Not too bad indeed. And Akai was curious after the result too :-)
